aluminum serving tray recommended service time.

Maybe this is a dumb question. Still, I am curious. How long do people/pizzerias keep the serving pans before replacing them?  The aluminum shavings don't seem to enhance the flavor in any way, so...

Photo is of my one and only 18" serving pan showing heavy wheel scaring.

We do not cut directly on the tray, we cut on a ridged liner on top of the tray even for in house service. The pizza can sit there as long as you need it to and it does not lay directly in the grease you see on your tray so the pizza stays crisp. For to go pizzas we just grab the opposite corners of the liner and lift it off the tray into the box after cut and garnished. My trays have no marks at all on them.

Just a home baker, but I don't cut on the tray either.
Use a cutting board, then slide tray under the pizza, move to table and eat.  :pizza:

Little Bean is spot on.  Use the ripple sheet then place on the tray....if you cant get them use a pizza circle and cut on that instead.

I like to have a couple trays just for cutting.  I get them 1" bigger than the pizza I'm cutting, then slide it onto the serving tray.
