Chicago Laminated Thins  - super crispy

Bari Italian Beef, Ditka's Hot Giardiniera, sweet onion

Ezzo Pepperoni (under the cheese) , Apple  Wood Smoked Bacon

Bari Italian Beef, Green Olives, Hot Giardiniera, Ezzo Pepperoni (under the cheese), Eggs (to make the pizza healthy), homemade Chicago fennel and anise sausage

12 RT, 48 CF

3% oil in the dough.  Dough is lightly floured and layered 4 times.  Dough is folded, balled then rested for 30 minutes....no butter/fats between layers.....

A 15" Garvey-ish Chicago Thin pie. One of the better pies I've made in awhile!!! Me and my wife wiped out all but half of it. I'll finish off the extra piece by bedtime!!! :drool: Oh, sausage, onion and mushroom.

Four day old sourdough.

This is the same dough as Monday. Rye and whole wheat added. It ain’t pretty, but it has a great chew and taste. Just baked on a sheet pan.

20% levain, 5 day cold ferment, 3 hour room temp, upper 50s% hydration, KABF, 6-7 minutes 550°

That is a nice looking set of pies. Did you do all that with one oven?

Yes with maybe a 10 minute recovery between pies just to clean up, cut the first pie, take pictures dress the second pie etc.

Lately my daughter has been making her own pie. She’s getting pretty good at stretching the dough but I have to turn it for her. These have whipped ricotta as a base with mozzarella, mortadella and pistachio butter.

Tim that mortadella pie you make always catches my eye, I am going to have to try that one out.  Very yummy all of those pies  :drool:
