Been fortunate enough to have acquired some live active starter from a friend.

I'm going to be trying it in a favourite pizza recipe. Can I use directly from the fridge? Or do I need to take it out before making my dough? What about after rising?

Thanks

Andrew

I bring it up to room temp, feed it, and wait till it is fully active. Never tried using it straight from fridge.

I have done it a couple of times with okay results.  It just really depends on what stage your starter is at.  It is best to bring it to room temps, refeed, and use it when it's active as Bill posted.
