discarded starter = crepes!

I'm sure there have been threads about recipes for surplus starter before, but I'll fire up another.

The other day I experimented with crepes and was pleasantly surprised with the result.  These might be a Sunday morning regular for me.

In the past I've made sourdough crepes with a more complicated recipe, I think I've hit on a simpler and better approach:
1) Water down some surplus starter until it's the right consistency for crepe mixture. You're done!

That is literally it. Then cook crepes as you normally would.  The crepes will definitely have a sour tang as you would expect, but if I do say so myself they are really good!   I've been doing savoury and sweet toppings and it's all good.
