We made 6, 18" dessert pizzas today with fresh blueberries, apples, kiwi, grapes, strawberries, and bananas.   The base was a ricotta mix.   Walter

My years of working in class bakeries really meshed perfectly with pizza today.  It was very fun and exciting.  I will be adding these to our pizzeria in Reno menu.   Walter

thanks everyone.  The first picture is apple.  Since I am going into business for myself I was advised by our lawyer to not disclose my recipes.  I have tweaked all of them over the past few months to prepare for our shop without the bakery component and higher volume.  I hate to sound like a snob but people visit this site with ever increasing numbers that want to open a shop.  The cool thing about the dessert pizza is most any fruit can go on top and there are  no rules.  I really don't remember what was on each except we had a straight apple and a straight blueberry.  Again I am sorry about keeping a close hand with the recipe but I was excited to share the experience with the dessert pies.  Walter

Oh wow! I've never seen fruit on a pizza base before!

I had a dessert pizza from Dominos a few years ago, and I have to say I was disappointed. It felt so heavy and thick - the ratio was definitely off. I haven't had one since now! I think I'd need a lighter dough or a cinnamon flavour for that to work!
