Drying my Ischia

My Ischia is making great bread right now and I assume it will make a great pizza.  If you have been following my thread on activating the Ischia you know I split it into two,  the original and a clone.  I decide to ignore the clone and see if I can revive it in 6 months.  The original is my go to and I keep it in the fridge feeding it every weekend.

As a safety back up I decided to dry some of it and put it in the freezer just in case the clone dies and I do something stupid and kill the original.
So after feeding and getting the original alive and happy I spread some on parchment paper and let it dry.  It took about two days to dry completely.  I broke it up then folded the paper around it and vacuum packed it with my food saver.  Put it in the freezer and hopefully I won't need it.

I am getting ready to activate my Ischia from Ed Woods this evening. If I get it going good, I will dry some and put it away. I plan to make 2 jars from it as well.
