Have any of you guys done a sourdough starter for Thin or cracker crust. I want to try to make a thin or cracker, and would like to try and do it with my starter, but did not see any info on it.  Anyone have any advice to sub starter for IDY?

It's been a while, but I have made a sourdough Chicago thin.  I didn't use a particularly low hydration and it worked out well.  If anything, it's less of a concern than other styles because you really don't need/want a lot of rise for that style of pizza.
Things have never been more like today than they are right now.
