Is my ischia starter activating too fast?
« on: May 18, 2018, 09:55:26 PM »
I started my Ischia starter from sourdo yesterday.  At the 12 hour mark I noticed it had a ton of bubbles/froth and had rose quite a bit.  I then fed it 90g/90g.  At the 24 hour feeding I gave it another 90/90.  About 3 hours later it has grown almost double.  I thought this was supposed to take 3-5 days, it has only been 1.  I kept it at 90f degrees for the first 24 hours like the instruction said and after the 24 hour feeding it was at room temp (78f).

It sounds very active, no worries. Put it in a dough and make something with it.

Here's what it says on the instructions:

Activation usually requires 3 to 5 days but it may take less time or slightly more depending on the flour and temperature.

90F and 78F is pretty warm and it will have lots of activity in those temperatures.
