S'More Pizza
« on: September 14, 2007, 02:57:59 PM »
I had a thought to try making a dessert pizza, which is a take off of the camping staple S'mores...Using graham flour (a very surdy wheat blend flour), sugar, butter, milk, egg for the crust, chocolate syrup or nestle bars for the "sauce" and marshmallow's for the "cheese"...I'll post the results as I'm waiting for my KA Graham flour to arrive.  I'll be attempting to bake in my wood fired oven, at residual high heat...not sure how this will fly, but i'll post the results.  If anyone else has an idea how to best pull this off, let me know, I think this could be a great way to cap off a night with a few extra thousand calories!

Just as an FYI, i tried making a s'mores calzone once. I used regular dough for the crust and stuffed it with chunks of chocolate and marshmallows. It sounds really good, but it really isn't. The marshmallow makes it overwhelmingly sweet, and it even kills the chocolate taste. Also, being that it was a calzone, the marshmallows didn't toast. If they had, the caramelization would probably have made it taste much better.

Your method sounds really tasty. Let us know how it goes.

I once made a calzone and used Recess peanut butter cups. Put the cups in the refer to chill and then chop them up and add them as usual. It was a big hit.

I just found a joint near me that has this on their menu. It's a sweet dough with maybe a hint of cinnamon. It's topped with crushed graham crackers and mini-marshmallows. It was then drizzled with chocolate sauce. This was a wood-fired style with a bit of cornmeal on the bottom. I was pleasantly surprised.

Noticed Peter Reinhart had a video on this on Pizza Quest and I had to try it. So we fired up the WFO yesterday and this was the results.. Oven was still a little too hot, but results were outstanding... especially after some whipped cream.

Nice! Where's the chocolate  :o  ?

For me the interesting part about these toppings is the chocolate against the crispy/chewy dough.

50/50 blend of milk chocolate/semi-sweet chocolate morsels
mini marshmallows
cinnamon toast crunch

throw it on a lightly buttered skin, in the order of marshmallows, CTC, and then the chips last.

bake no higher than 450

also if you want to make an 'apple pie' pizza, combine 1lb rolled oats, 1 1/2stick melted butter, and 2c loosely packed brown sugar.   spread diced jel-sauced apples over pizza, sprinkle crumb topping.

The different combo's for what people call S'more pizza's are interesting. We pre-bake the crust, then let it cool. Place chocolate chips, mini-marshmallows, and crushed (into small chunks, not fine) graham crackers.. slide it back in and let it roast the marshmallows in the WFO and it comes out very nice.

Now, if someone could just give me a hint how to keep the melted marshmallows from sticking to the cutter.  :D

Have you tried spraying the cutter with something like Pam? I do that with my grater and it makes cleaning cheese much easier.
