My signature dessert pizza
« on: February 09, 2008, 11:29:41 AM »
??? One day a friend from New York was visiting.  After making several pizzas he asked me if I had a dessert pizza.  I told him to give me a few minutes and this is what I came up with and have used for several years now in my restaurant.

8" pizza crust stretched very thin
top with organic sugar and small dollops of sweet cream butter
place in 850 degree oven until sugar/butter is caramelized
cut in eight pieces
top each piece with a tablespoon of the best real Mascarpone you can find
drizzle over each piece a 1/2 teaspoon of White truffle honey
then lightly sprinkle dried organic lavender flowers over entire pizza

Savor and enjoy a taste treat dichotomy between the earthiness of the truffle honey, the sweetness of the sugar base and the powerful aromatics of the lavender

Try this out on some friends but don't tell them the ingredients first and see if they can pinpoint each topping without prompting

If you ever take a picture of this delicious dessert, I would love to see it!

It sounds really nice. I'll definately try it sometime!  :)

Here's my wife's all time favorite dessert pizza, based on classic italian flavours:

1. Slice canned or fresh pears on the pizza base.

2. sprinkle some crushed walnuts on.

3. Crumble some good quality Gorgonzola cheese over it.

4. Drizzle some good quality honey over. (could be done either before or after baking.)

Wow, that sounds amazing!!! Especially since Gorgonzola is such an underused cheese!
