Alsatian Apple Dessert Pizza
« on: October 17, 2008, 02:08:31 PM »
Looking for interesting ways to use some apples I bought at the farmers' market, here is a dessert pie that was delicious:

- caramelized apples
- a shot of calvados
- pastry cream
- powdered sugar

I've said many things about pizza based on conventional wisdom or my misguided assumptions/conclusions that have turned out to be embarrassingly wrong. When it comes to pizza matters, there is no substitute for ignoring what others say and just forging ahead on a path guided by your preferences.

Bill,

That is a great looking pizza. When you make dessert pizzas, do you alter your dough formulation in any way, as by adding a bit of sugar or fat to the dough, reducing the amount of salt, etc.?

Thank you, Peter. No alterations. Toppings have just enough sweetness and fat.
