Master Biga Question
« on: March 07, 2021, 11:57:31 AM »
I am using the Master Biga app to create a pizza with these BPs:

Flour (100%): 357.86 g  |  12.62 oz | 0.79 lbs
Water (67%):  239.77 g  |  8.46 oz | 0.53 lbs
ADY (0.4%):   1.43 g | 0.05 oz | 0 lbs | 0.38 tsp | 0.13 tbsp
Salt (1.83%): 6.55 g | 0.23 oz | 0.01 lbs | 1.17 tsp | 0.39 tbsp
Olive Oil (1.5%): 5.37 g | 0.19 oz | 0.01 lbs | 1.19 tsp | 0.4 tbsp
Total (170.73%): 610.98 g | 21.55 oz | 1.35 lbs | TF = 0.14

The app is set for my kitchen temperature and a 20% amount of biga for the entire recipe.

Master Biga created a biga with a 17 hour 21 minute rest with the following measurements
0.07 kg flour
0.03 kg water
0.4 g of yeast

The amounts of the refresh ingredients make sense to me as if I was calculating by hand but the app doesn't include any additional yeast in the refresh.

Shouldn't there be an additional 1.03 grams of yeast in the refresh? Or am I missing something?

Thanks for any help.

In biga technique, there shouldn't be yeast added during the final dough mixing, that's why the app puts everything during the first phase.

Thank you for your answer. That certainly explains how the app says that.
