I am presently stuck on making my dough with 100% biga and like it. Going on a trip for a week and want to make it at the destination in Connecticut. Coming from Florida, I don't know what to expect for performance of my starter but even more concerning is that there won't be a stand mixer available. Is it possible to do it all by hand?
