converting to stiff starter ie lievito madre/pasta madre

any folks use stiff starters like the panettone folks ? also what about converting a well known culture like ischia to stiff?

Lenny:  Did you give it a try?  I just completed step one of attempting to convert my Ischia to 50% H2O.
