Hello Mr. Dangerous. Would you be able to direct me to a Canadian source for steel pans? So expensive to ship pans over the border.

I'm not aware of a Canadian source for these. Mine came from Michigan. If you are ever in the Western suburbs of Detroit you could just drop in and pick them up. I would just buy them and send by mail. They will probably out live you and your kids.

Has anyone tried the brick cheese from Lynn Dairy that's mentioned in Dangerous Brick Cheese Resource Thread?

I just posted an update in my Dangerous Brick Cheese Resource thread.
I would recommend trying Buholzer Bros. Brick Cheese. It will come up for sale at a distributor in a Google search.

After our move from New Jersey to a ranch in the free state of Texas north of Dallas Ive started making pizza again. We have an all electric home and I now have a dedicated second oven ready to bake where I keep out cordierite stones and steel plate.
The results have been great and I even like the pizza better than when I was using a natural gas oven.

These Detroits have Buholzer Brother's Brick Cheese. Great pizza. See the pictures.

Made a couple nice Detroits last night. Pepperoni sautéed Cremini mushrooms, green pepper, and onion, and then a pepperoni both made with brick cheese. I ate two squares of each, and fell into a pizza coma.lol

Pepperoni sautéed Cremini mushroom green pepper, onion.

Three meat with pepperoni, bacon and Canadian bacon a.k.a. smoked pork loin.

Looks great!  :pizza: I try and shoot for that thickness.  Sometimes I miss the mark and don't proof long enough.  Still good pizza.  What kind of cheese are you using?
