2 stone blackstone saved my behind

 i am a mobile wood fired operator. i own two mobile units and have a partner that runs his own out of my shop. two weeks ago i overbooked . i had two graduation parties and a concert called rocking on the river. i also committed to a retreat that does concerts monthly. i figured they would be good with other food options. they were not and were quite pissed at me.i told them i would work it out and my only choice was to bring over to there venue my 2 stone and blackstone ovens. we set up a tent both ovens and worked out of cold cambro catering boxes. we have always done 12 inch pies ad 12.00 my dough guy messed up and did 200 gram balls which we used for other events that week end. it was a blessing we cut the price to 8.00 and the concert goers were happy at such a deal. also it was easier for one of my cooks to be trained a few days in advance to work the event. we started with 100 balls and had to go back to our shop and pick up more dough.and the venue owners were very happy with the quality of the pies and felt the taste was right on with my wood ovens. so thanks to mt BS ans TS ovens a happy ending was possible ;D

Both of my truck s were booked Saturday night. Use the Blackstone and two stone to sell slices.they were cooked at my pizzeria and deliver 20 at a time. We reheAted using the two ovens set at 700 degree. Sold 800 slices at 3.00.unfortunately we could not help up with getting pies to the venue fast enough and had periods were we lost sales to it he vendors. Love the b.s. and 2.Stone. they are very versatile.

What is the initial size of the pies.  Last year we did our local loggers day and sold slices , and we are doing it again this year which happens to be this Friday and Saturday. I took 250 gram balls for 12" pies and cut them into 6 slices and sold the cheese for $2 and the topped for $3 2 slices were sold for $5. 10% of sales goes to a local charity and we deal with coupons. We replaced a papa murphys for pizza sales and as far as Sq inches of pizza that is close to what they did as far size for the slices.

our pies are 16 inches. we did 6 cuts at 3.00. rent is 130.00 per event. we signed on for the season which is 19 events. pop and water sales usually pay the rent.
