About to be a Pizza Maker

This guy I know Joey is opening up a pizzeria in a week or so called Portavino's. I know him and everything, so he wants me to make some pies for him. Problem is I don't know oogatz about makin pizza pies. He's gonna train me soon, but I'd like to go in there knowing some stuff off the bat, yah know. And it's an NY style pizza shop. If that helps. Thanks in advance for some advice or suggestions to the newcomer.

If you have extra time just start reading as many threads as you can.
The combined knowledge on this site is as good if not better than most pizza books written.
And although many topics are repetative, most will offer at least one new tidbit of knowledge to your pizza know-how. :)
