It “might” be possible to get such a thing field certified. We run into this with UL listings on electrical equipment as much is now CE labeled… not wrong, and usually certified to a safety listing, just certified by someone else… a few inspectors want an actual certification and at least for electrical items there are options to field certify. I also ran into this issue with a medium sized coffee roaster… the assembly was not UL (or CE) certified and the electrical inspector was having a cow… there is a provision in the electrical Code that allows certain equipment to only have each component certified, not the whole assembly. Think about the SS counters…often not UL stamped and snickered as they are custom, they just have to meet the same design standards.
Of course each inspection despartment is different so YMMV.
