Hi everyone. I’m hoping someone will be able to assist me here. This has been driving me mad for a few months now.
I have a dough recipe that when followed seems to always make the bases come out perfectly how I want them. However recently I have hired workers and showed them how to make the dough but sometimes it comes out looking very white and undercooked.
Another thing to consider is that sometimes the whole dough batch comes out with this issue and sometimes from the very same batch I would have one pizza base that comes out perfect and another that comes out looking very white. Even if it’s the same type of pizza and put in at the same time!
1. Considering my recipe below. Would and variation of the recipe cause this issue where the dough comes out looking white and dry
2. In the case where the dough mix has variable results, so one pizza base comes out perfect and the other comes out looking white and dry. What other factors could be at play? The only other variation I can think of is we oil the pans and put the dough on and leave the bases to sit on a tray until the pizza order comes in. Usually the pizza tray is covered with a plastic bag to prevent air coming in. Sometimes they sit there for 2 min other times 45 min.

Pour 6ltr bottles of Cold water
Pour 100g white cup of Yeast
Pour 500g black cup of Sugar
Pour 12.5 kg of Flour
Pour 150g white cup of Salt
Pour 500mL of Oil and again after turning on the machine 500mL = 1ltr
Add ½ Litre water if not sticking
Add flour if sticking to much
Add oil if dough to hard
Wait 30 min for dough to rise
