Apple Pizza Desert I serve in my restaurant

This is the apple pizza desert we serve in our restaurant..cut up apple, cinnamon, brown sugar, water, flour... cooked for about 20-30 minutes. Mix is then spread evenly on the pizza dough and then we cook the pizza in the oven for 3:30 minutes and then we top it off with icing.
It's simple to prepare, and tastes damn good. :)


PS. if anyone wants the recipe to test it out, send me a message. This recipe was intended to be SUPER easy for my kitchen staff.

Looks great!
Try brushing the skin with melted butter (edge to edge) then sprinkling with a cinnamon-sugar mixture before adding the apple, this turns the crust into something more like a pastry than a pizza crust. I do this with my dessert pizzas and it adds a whole different dimension to the flavor.

This is what he sent me. I eyeball scaling it down for a few apples. The original recipe is for a restaurant. For icing, I take a few tablespoons of cream cheese, mix in the same amount of confectioners sugar and thin it with a little cream or half and half. It is very good desert pizza.

Desert Apple:
1. Remove the core and skin of 16 apples, cut into small pieces and place in the pot
2. Pour 3 cups (720 ml) of water in the pot
3. Pour 1 cup (240 ml) and 1/2 cup (120 ml) brown sugar pot
4. Pour 1/2 tablespoon (7.5 ml) cinnamon (powder) into the pot
6. Pour 8 tbsp (120 ml total) of flour in the pot
7. Cook for 30 minutes (more or less) to reduce water and mixed frequently to prevent burning

Spread the mixture on your dough, cook for your usual times (I use a conveyor belt oven in my restaurant we cook thin crust pizzas for 3:30 minutes at 450F). When it comes out make sure you put lines of icing on top!

Thanks a ton for posting, I had hoped someone would share like this since OP seems to have moved on from the forum.  Any leads on the dough/crust that they went with?   Hoping to give this a go soon.

I don't know what crust the OP used, this is all I got on the original recipe. I put the apple mixture on my usual pizza dough (63% hydration, 2.2% salt, .25% IDY, 2 day cold ferment) and bake in in a wood fired oven for about 4 to 4.5 minutes with the oven floor in the 600 to 650F range then I drizzle the icing on with a spoon.
