Thanks to Hans and Scott for your excellent advice, I got my very first starter going from scratch. It triples after feeding and looks/smells healthy. I appreciate the advice, guys!

This is a bread made with the new starter using 80% caputo saccorosso and 20% fresh milled kamut.
