18 inch baking steel options
« on: June 24, 2023, 11:13:42 PM »
I want to start making 18 inch pizzas in my home oven. I really like the baking steel, but it seems like the largest they have is 16 inch. Are there any options to making this happen?

eBay, Amazon, Etsy and your local metal supply company all have options for you to buy larger sheets of steel.

Your oven is 18" deep?

Mine is 17" deep as far as fitting a steel, but there is an extra inch where the window is. My steel is 17X18x0.5. I make an 18" pizza by letting the last inch hang over the edge of the steel. After a minute or so in the oven, and the crust has set, I lift up the folded over edge and rotate the pizza just a bit. The last 1" sticks out over the edge of the steel up into the area in front of the window. I do a couple turns over the next 4-5 minutes. 585F.

I measured it and it looks like it would work. The rack in the oven is 17 inches, but with the measuring tape touching back of oven to front of rack it measures 18.5 inch.
Do you have a link of which steel you're using?

It's a custom cut by Baking Steel.

I use a 18x19x3/8 from 222steel on Etsy. Fits in my family dollar quality Whirlpool electric no problem.
