Are these good pans for pizza or do they need to be dark?

I see a lot of inexpensive stainless steel pans on amazon and I like that they are stainless and not aluminum. Do they need to be dark/not shiny or is this fine?


The price is good and they have a lot of different sizes/sellers.

I actually have a couple of the 12" pans from that listing.

I generally think of that purchase as having been a mistake. Stainless isn't very conductive compared to regular steel or aluminum. They are also slightly dished, so if placed on a hearth there is just one small area touching the hearth.
There are many kinds of pizza, and *Most of them can be really good.

Ahh okay. I was planning on using them really hot like in an outdoor oven (which is why I want stainless) and then 50% of the bake being removed from the pan.

The plan was to use them on an overheated stone as to reduce some bottom heat and then that way I could just bake with low flame without having to reduce the stone temp before launching.
