Hello everyone. I just purchased my first pizza oven I went with the Pizza party Ardore oven with the biscotto floor. As i was taking the biscotto floor out of the box I noticed that it has lots of dust which I assume is from the clay (process). Should the biscotto bricks be cleaned first? if so how? and is there a burn in per se to the biscotto prior to use?

This process can takes awhile.


First burn, temp half way for 1 hr, cool down.


Second burn, maybe start this next day, Biscotto's can talk a long time to cool down.
Half way for 20-30mins, then crank it full blast for 1 hr.


The purpose is to ensure there is no moisture in the stones that would cause the stone to break.

I would start with a very light damp rag, or even dry, to clean off the stone.
Stone goes in smoothest side up.

I'm not sure about curing just the stone if you need to do each temp on consecutive days like an oven that is 4-6" thick.
Stone is not that thick and you can heat it completely in an hour.

I think starting at lowest temp would be safest, then work your way to max.
