Are wooden peels better for launching?
« on: March 01, 2023, 04:54:27 PM »
I've just received my new wooden peel.

I used to have a metal peel.

I use 64-65 % hydration dough lately, sometimes the dough sticks to the metal

do you think the wooden peel could be more efficient in that regard ?

Most prefer wood peels over metal for launching, especially dusted with semolina or rice flour to reduce sticking.

Less sticky, yes. And the rigidity of a wooden peel also helps.
