Quickly Clean DS & Other Pans

I was sure I saw this plastic scraper mentioned in one of the panned pizza topics; I thought it was Walter. After an hour of searching and not finding it I am posting it here.


Recently, I ordered this poly (plastic) dough scraper with the goal of using no soap and no brush, scrub pad, etc. on my Detroit Style pans. I used these 2 pans in Memphis Thursday and brought them home dirty to Michigan yesterday. This morning I spent 30 seconds scraping each pan, 30 seconds rinsing each under hot water, then a minute or so wiping each one dry with paper towels.


Since they came out so nicely, I heated them in the oven and gave them a very light coat of flax seed oil, which is what I used to season them when they were new. Some of my previous, more aggressive, pan cleaning damaged the seasoning I had built up. Pizzas were not sticking but it bothered me. No more.


I am excited about this and feel sure it will be helpful in other pans, both glass and metal. Try this scraper if you have pans you care about. FWIW, I got the ivory one for under $11 but it is ~$4 cheaper if you select white. [size=78%]https://www.amazon.com/dp/B004882DQO/?tag=pmak-20[/size]


Pic 1: scraped, rinsed, dried. No oil yet.
Pic 2: heated to 400°, put a small amount of oil on paper towel, wiped vertical and horizontal corners first, the the rest of the pan. Wiped as dry as I could with a couple dry paper towels. Turned lights off for this shot because of the glare.

I do this as well. I definitely remember Walter saying he uses a plastic scraper on his Sicilian pans at one point, I think that's where I picked up this method.

Thanks, Jon. I searched for every combination of scrape and scraper except "cool scraper."  :-D
Good to have the link and confirmation my memory isn't entirely gone. Props to Walter for the tip that led me to try this.

Nice!  Plastic scrapers are also the best thing to use in a pizzeria if you have plastic dough trays.  If you use metal scrapers to remove your dough as you are making pizzas they will last only a few years.  If you use plastic scrapers they will last almost forever.

Thanks Scott. Agreed. Along the same lines, I have a nice steel bench knife/dough scraper but do not want to bugger up its leading edge or turn it into a tool I need to maintain.
