Round two was much better. Flavor and bread texture was spot on. Now I need to shape to get better distribution of pepperoni.

Next time lay pepperoni out like your making a pizza then roll.   This will be better distribution of the peperoni and they won't clump

Hans, bread dough seems to be the best.   Pizza dough does not rise enough IMHO :D

Great you live around the corner from Sarcone's.  Thanks for the tip you don't think they ferment very long (if at all).  Did you ever see them making the pepperoni bread?  What is deli sliced pepperoni mean?  I used sliced pepperoni but maybe am missing something.  Do you notice that the pepperoni bread has a slightly sweet taste?

I was going to try another attempt today with a very fast bread dough, but other things got in the way.  My last attempt wasn't the best.  My pepperoni was frozen too, so don't think it oiled off enough in the bake.

Didn't know they had pepperoni and spinach, but that sounds very good! 

If you have a chance and purchase some again can you take a couple photos?

Deli pepperoni being the pepperoni from the deli counter at the store vs a stick. A lot of the bakeries use that for their stuffed breads around here because they have it on hand for sandwiches. Not entirely positive that's what they use, but worth a shot.

Hi Norma! Deli Pepperoni is often called "Sandwich Pepperoni." It is usually 2.5" to 3" diameter. It would cover much more of the pepperoni roll's insides than regular sliced pepperoni.

By the way, I'm in Buffalo, home of the "Original Pizza Logs" which are deep fried and resemble egg rolls...

I made something similar last night but made individual rolls.  They were about 53 grams each before adding the filling.  I used a Parker House roll recipe and put a slice of pepperoni and a chunk of block mozzarella into the center of each one and sealed.  I've got to make again as I only used one slice of pepperoni and they need at least 2, maybe 3.  When they were done I buttered the tops and sprinkled on garlic salt.  I make the stand alone rolls all the time.  The bread is great by itself so the additions only enhance it.   

I might make them again today so I can try them with additional pepperoni. If I do, I will take some pics.

Our neighbor when I was a kid made a pepperoni cheese bread like this when I was a kid. I tried making it a couple times over the years but it was not all that good. Admittedly, I was just winging it and not following any sort of recipe. This thread gave me the idea to see if my mom would call the old neighbor to see if she would give up a recipe. Something like this is way better to bring to parties or give as a gift than a pizza.
I said to my little one, "come here so I can change you".
He said "change only comes from within".  :-/
