Making New York Style Pizza in Ooni Koda 16

Any recommendations for Dough recipes using this oven.  I try to turn this down to the super low but trying to balance the flame heat and stone temp.   The challenge is to get it baking for at least 4 mins.  I'm thinking of using the Caputo blue with the All Trumps.  Appreciate any advice!

By super low are you doing the trick where you push the knob in to turn it closer to the off position but holding it just back from that? With the flames just barely fluttering I can do 6 minute bakes using just all trumps (or whatever high gluten malted flour).

Exactly, the technique for super low.  I am also going to try the Caputo Americano.  Thanks

Caputo americano is what I've been using lately. Really like it!

Yep.  Used Americano last weekend and made one w/62% hydration.  Thought it was perfect.

Just a guess but, probably not.  They wouldn't want to be liable for any damages (to the user/oven) incurred from using the "low-zone hack".

Otherwise, they would've mentioned/showcased it during the launch of the oven.
