Racking pizza before boxing

I saw a post a while back about putting pizzas on a rack or screen to cool before boxing for delivery... how long is ideal to let sit before boxing? What exactly does this achieve? Thanks

It helps lessen the steaming in the box. Especially if you immediately put it on a non-permeable surface (the bottom). I recall reading something the Dough Doctor had recommended that 'even 30 seconds' is worth it. We use a metro shelve setup with pizza screens on them that we let the pies sit on until they are cut. We try and follow the at least 30 second rule, honestly, a minute or two is fine. Beyond that, we normally will throw the pie back in the oven to bring the temp back up.
