Escalon 6 in 1 - Miami/FLL?
« on: November 16, 2019, 11:11:53 PM »
Hi All,

I'm looking where can I find Escalon 6 in 1 around Miami/FLL in a retail store, in singular units.  I am trying to work on my own sauce rather than buying some chain sauce and don't want to order a full case of Escalon only to find that I'm not a fan.

Thanks

Check out Gordon Food Service. They have 2 locations in Miami. They are retail stores and have all kinds of great pizza making ingredients.

Thanks so much for that! Indeed they had the Escalon and a bunch more.  Unfortunately only in a big container, but still got it anyways :)

Glad we could help. I love GFS. They have all kinds of pizza making stuff. Did you grab some Grande cheese, or a 50# sack of All Trumps, along with the Escalon's?

I had a can of 6 in 1’s in my hand this afternoon at GFS. In reading the label I learned that like the 7/11’s I tried a few weeks ago, these had not had the skins removed. The taste of the 7/11’s was good and I imagine that the same could be said for the 6 in 1’s but I bought one #10 can ground peeled instead, which I have been using in our meatball sauce for many years.

That will be a big project and will begin in about 3 weeks. It will take 3 cases (18 cans) of ground peeled and a coucple cans of whole pear shaped tomatoes. With the other ingrediemts added to make the finished sauce it works out to almost exactly double the weight of the meatballs: approximately 80 lbs of meatballs and 160 lbs of sauce. We are going to have to scratch a few names to make sure we can do this with one  big batch. First batch should make 18 pans of 35, or 630 meatballs. I have one business supplier I still want to give a large pan to for their family run business. Two other suppliers I regularly took packages of 24 or more meatballs won’t be making the cut as I have not dome anything with them since getting sick, nor have they done anything for me in the last two seasons. Our list of friends and neighbors should still work as a couple have moved away and we dod not know their new buyers well enough yet.

I still do not have much stammina but have gotten better at working smart. Our sons, daughter, and their spouses will be here and want to help so that will be nice. Without their help , I would probably try to keep it to 25 lbs of meatball mix, something my wife could help me complete a couple evenings after scchool.
