Looked at focaccia recipies and they all seemed to have herb infused oil mixed into the dough before letting rise. My 'no knead' that had been doing its thing in the fridge for a few days didn't have any in it, but I wanted to try something different. I took a chance and took out about 300g of dough, added the oil, garlic, and herbs I had simmered and cooled. Kneaded it as little as possible to incorporate the oil, let rise 1.5hr, pressed into oiled pan, topped it with the remaining oil with garlic and herbs, topped with some veggies, let rise 20min. Baked. Came out remarkably delicious. So glad this is another thing I can do with my 'no knead' dough.
