Breville Oven - Other Foods

This thread is for other foods such as roasted vegetables, which the Breville is remarkably effective at by virtue of its ability to separately control the deck and top temps. Over time, I'll put links in this thread to the existing links on other foods  in other threads:

Potato, Cabbage, and Taleggio.

Please add posts to this thread about your efforts to cook other foods in the Breville oven. Questions welcome. Please keep on topic!

Crispy Pan-Roasted Potatoes

The Kenji recipe is perfectly suited for the Breville:

A few notes:

750F Preset
Used twice the about of fat so that I could cover the bottom of the pan with a coat of the infused fat
No need to turn potatoes - came out evenly browned on both side
They just weren't right until I ate them with ketchup!
They seemed better after cooling for several minutes.

Do you have any issues with spatter or smoking when doing this Bill?

Not that I recall. I use clarified butter whenever I can in this oven.

I really didn't measure the time - maybe 6-8 minutes. I shook the pan every minute or so.

Probably my favorite "other food" to make in the Breville: thick-sliced mushrooms in clarified brown butter. There are some unpeeled garlic cloves in there also that will be smashed and used later today in a white pizza sauce. The mushrooms are also destined for the white pizza.

I've made these potatoes before (in the home oven).  They are really good.  And I 100% agree that they seem to be better the next day.  Had some amazing breakfast tacos the next day.

475 top/475 deck, Even, cheese on top after 5 minutes

Amazing tips. I’ve made eggplants. Just cut them in half, crosscut the inside, put olive oil / sea salt over and inside the cuts and program TOP and DECK at 600 / EVEN HEAT for 10 minutes. They’re delicious.

I know nothing of this companys products, but i will never buy from them based on the way they handled chefsteps recipes and the sous vide joule.

I've been a customer for years and ChefSteps is an exceptional company with outstanding customer service and fantastic products (including their recipe site, which is a labor of love).  Breville was the perfect partner for them (rescuing them from the grave) and they continue to excel.
