Well, it's not really a marinade. More like a pot roast. Better for sandwiches. These pics are from beef chuck, but you get the idea.

I also like a good medium rare reverse seared elk roast with simple SPOG. Variety!

I doubt it will matter with that ranch dressing mix as i find its the most over powring ingredient in the dish, but if you ever do Italian Beef, Besides the Beef, these are the star of the show.
