Hello!

For a couple of years now, I have been doing my cold fermenting in the fridge with a large Pyrex glass bowl with a lid. Even after I cut the dough into 5 balls, I put them back into this bowl, however, they are on top of each other.

Is that all a bad idea? I was not sure if a proofing box would be much better or about the same? I was not sure if the glass bowl with a lid is the same as the plastic proofing boxes when it comes to moisture etc.

Any thoughts?

If you don't have any problems removing the dough balls, I don't see a problem.
A proofing box helps keep them apart, also the lid does not seal tight (at least mine doesn't).
I am assuming the Pyrex lid seals tight ?
You  should have some way for the gasses to escape.

I  think glass always beats plastic for food.

I use Pyrex measuring cups and plastic film. I like volume measurements ...  :-D

I use Pyrex 1-quart bowls with lids for all of my cold fermented dough. They are well-suited for the task.
The yeast flies south in November.
