Hello!
For a couple of years now, I have been doing my cold fermenting in the fridge with a large Pyrex glass bowl with a lid. Even after I cut the dough into 5 balls, I put them back into this bowl, however, they are on top of each other.
Is that all a bad idea? I was not sure if a proofing box would be much better or about the same? I was not sure if the glass bowl with a lid is the same as the plastic proofing boxes when it comes to moisture etc.
Any thoughts?
