Question about Roman Pizza Al Taglio

Has there ever been a pizzeria that serves individual pizza al taglio?  Like a sit down restaurant where you order say an 8x10" pizza and it's made to order(par baked dough then topped to order).  Similar to how Detroit style is served. I've never seen it done and I'm wondering if there's a reason for it.

I would say that the answer is probably no and the reason is staying true to how traditional al taglio is made using very large sheet pans and selling it by the slice/weight. Making it in smaller pans would most likely alter the pizza as well.

And of course Al taglio literally means 'by the cut.'

(The recipe he shares above with spelt is 60% hydration and so seems 'off.' I followed it and it did not turn out well. But maybe I boned it.)

I can't vouch for it as it is out of my delivery area.  The pizzas are 8 x 6, made in a commisary kitchen and then delivered.
Things have never been more like today than they are right now.

In atlanta there is a place called legion pizzeria which parbakes and then will serve whatever size by cutting and topping. It's not bad and the prices are pretty fair
