I bought a 3.5oz can of Caputo ADY, and the can says to refrigerate after opening and use within 2 months of opening.  I only bake 2-3 12" pies per week, using 2g of yeast.  Does anyone have a suggestion for keeping it fresh for longer?  It wasn't expensive, but feels very wasteful to use about 10% of the can before throwing it out.  Thanks.

DirectorDisch,

Here are a couple of posts by the late Tom Lehmann:

There are also some other interesting posts in the threads where Tom's posts reside.

To the above, I should add that Tom principally served professionals over his career, so his position on the lives of various forms of yeast was conservative and intended to minimize problems for professionals.

I bought the same brand of yeast in January 2021 and keep it in the fridge. Still works just fine!
