Coming around to the steel

Didn't think I'd be able to come back indoors after getting an outdoor gas fired oven but the steel and winter is bringing me back in.

KAAP flour (50% poolish at 100% hydration)
67% final hydration
2.5% salt
2% dmp
1% oil
~.1% idy

7 min bake on the steel with electric broiler set to 525F
