Hemp Flour Pizza Dough - by Melt PizzaBar, Goa India

Hello Guys,

I've just joined the forum after a year of soaking information from it and opening my pizzeria called Melt PizzaBar in Goa, India

I wanted to show you guys a recipe ive been working on - so that it may go on and live and thrive beyond my oven.

Hemp Pizza Dough Recipe:

First i mix the Hemp Protein (ground from heirloom hemp seeds) with finely ground Whole Wheat in a 30/70 ratio
(30%hemp/70%WW) = Hemp Flour

All purpose flour (75%)
Hemp Flour (25%)
Water (77%)
Fresh Yeast (0.8% Total, 0.03% Poolish)
Salt (2%)
Honey (2%)
Oil (1.5%)

Poolish:
50% of the total flour by weight - with 100% of the hemp flour and balance all Purpose Flour
Water 1:1
Yeast 0.03% of poolish flour weight (or water weight since they are both same)
Set overnight in kitchen @ 75F for 14hrs
You want to get the poolish just when there are a few bubbles popping on top.
Add remaining AP flour, water  and remaining yeast to the poolish and mix till fully incorporated on slow for about 6-8 mins.
Add Honey and mix for 1min
Add salt and mix for 1 min
Add oil and mix for 1 min on slow
Go the Med High/High and Knead for 4-6 min
Remove bulk into an oiled tray, stretch and fold 4 times, flip over so the seams are underneath the dough and let rest for 1 hr.
Cut and form balls on an oiled surface
Let rise for 1.5hr -2hr if using same day, or ball and directly in the fridge (uncovered for first 2 hrs)

I get best results if using the balls next day i.e: after 24hrs in the fridge as the high hydration makes them easier to handle colder and the dough seems more workable, but the oven spring is best if used same day for some weird reason.

I bake mine in my WFO - on about 600f floor temp for 5min and finish at 650f for about 1 min.

Pizza: Roasted Pumpkin on wild spinach, pine nuts, fresh Ricotta and a sprinkle of Sumak Spice.

Good idea on moving to specialty grain; that's what I thought when I read the other post. I bet Norma is going to want to try this! She survived the beetle flower after all.  :-D

Enjoyed reading about using hemp flour for pizza dough by Melt PizzaBar.   ;D  My one farmer friend was going to make some hemp flour, but don't think he ever really did it.

Hey norma : Once again your trials feedbacks on this forum have helped me troubleshoot sooooooo many of my early day problems. I am ever so grateful. You could just as well buy hemp protein and make your own 30/70 mix as i had to. Unfortunately in india the Food standards and safety authority doesn't have a seperate food category for hemp - the entire species of the plant is put into the narcotic schedule. there currently is a case in the supreme court to challange that and create an agricultural category for the non psychotropic plant. I am buying my hemp from legacy farmers who have been growing them for 100's of years but without an active marketplace for them to sell to.

I hope you do take this recipe and give it a try - i would love to see how it develops with other strains of the hemp around you.

Anywhich ways - Any thoughts, feedback, comments on the looks of my hemp crust?

It has a crisp shell - but is rather soft and fluffy from the inside.

I love the look just trying to wrap my sence of taste on it.    :drool:

Wonder if you added pumpkin seeds to it?

cant help you there mate - got to try it to know it :chef:

and even though the amount of hemp is relatively less - it adds a slight sweet earthiness to the dough unlike any other grain i can compare it too. And im sure this will change with hemp varieties grown elsewhere...

No Pumpkin seeds but did add pine nuts - the pumkin seeds go into our salads

Sorry, but this is a pretty butt ugly looking pizza but that's jus my own opinion and I really don't possess much artistic virtues.
However.... You using ground hemp seeds and that intrigues me.... Are we talking about Mary Jane seeds here? I know, I'm dumb.
But back in the day I made my share of weed brownies and even scrambled eggs!  Me likey... Lots. Can you tell me how to make a weed pizza?

Should be possible to use cannabis-infused olive  or coconut oil in any pizza recipe that uses oil.
