Anybody tried adding some rice flour in their dough? Ive seen a recipe that adds a small amount of it but I'm not sure the purpose of adding this, maybe to raise the gluten content of the flour?

There is no gluten in rice. I believe that rice flour adds a bit of crispness to dough.

Do a search for Pinsa and you will see a use for rice flour.
