Temperature for balling the dough
« on: March 31, 2022, 05:29:01 AM »
Hello,

after the night in the refrigerator (bulk ferm), should I bring the dough to room temperature before I make the dough balls or should I rather do it with the cold dough?

Cold dough... This will give the dough time to ferment at room temp and relax after balling them up. A recently balled dough will not stretch easily.
