January 2021 Monthly Challenge: A "Good Egg" Pizza

According to Merriam-Webster, a "good egg" is

This month make a pizza you like, preferably informal and somewhat old-fashioned, and top it with good egg(s).

Breakfast  pizza that I made back in August with eggs, shredded mozzarella cheese & ground beef in my kitchen oven under the broiler.


H‑E‑B bread flour
65% water
3% EVOO
2% salt
2% sugar

First pizza of 2021 just happens to be Egg, Corned Beef, Swiss, Haks Mustard BBQ Sauce, Crushed Bianco Tomato. Was a fine start to 2021 pizza making. 5 minutes baked on steel @ 550F with 30 second broil. Egg yolk was just runny enough.

Had 9 people over last night....made 15 doughballs.  Wound up with 3 leftover so decided to try cooking with residual heat in the oven.  Was just over 450.  Made a breakfast pie along with 2 cheese, garlic and basil “breads”.  If it wasnt for the coffee “distracting me” from watching the oven the pie would not have been as well done.  Still, the boss and i finished it off anyway. 🤤

18” pizza - Italian Sausage, Boars Head Pepperoni, shredded mozzarella cheese and one good Egg. Cooked on my charcoal grill using MPO/MPS Prototype.


King Arthur All Purpose Flour
62% water
2.5% salt
ADY
1% sugar
2% EVOO

There's the crust, then a layer of seasoned cottage cheese (salt, pepper, dried oregano, cayenne, and olive oil), then a layer of cooked and crumbled bacon, then a layer of cheese (mozzarella, Parmesan, and Romano), and eggs nestled in there.

I've made this three times, this is the first time I've gotten the eggs the way I want them. The key is to take them out when they still look raw.   ;D

Not my pizza, but one of my staff members made a Shashuka inspired pizza for a marketing competition a few months back...  It was one of the prettiest I've seen...

Here is my effort.  This is the French-inspired pie that I have been making for my wife, and the challenge gave me the idea to "just put an egg on top".  It is creme fraische, sauteed ham and onion, herb de provence, emmentaler cheese, in addition to the egg.

A couple lessons learned:
  • If using the broiler, the egg does not need to go on right away.  My yolk ended up getting cooked through.
  • The egg needs to go on after launch.  Not only for the cooking time reasons, but I almost had a disaster on my hand as the egg seemed like it would fly off when I was trying to launch from the peel.  I managed to avoid catastrophe by scooping the yolk back into a bowl, and then dropping it after launch.

Thanks for the idea to add the egg!  It sort of became a croque madame pizza!  :chef:

Jon posted about salt cured egg yolks and I made a mental note to give them a try and then this monthly challenge was posted so I had no choice!  I started them in the salt on 1 Jan and unwrapped one from the cheesecloth for tonight's bake.  It was strange, sort of like a jellied fruit.  I sliced a couple pieces off and ate them straight and then wasn't so sure I wanted to put it on the pizza  :o

So I grated it fine and used it sparingly post bake.  10" South Shore Bar Pizza made with 180g of dough, 3oz sauce, 5oz cheese, fresh jalapeno, green onion, homemade fennel sausage, and grated salt cured egg yolk.  Pretty good.

It's Detroit dough topped American cheese, 5 beaten eggs with some bacon, ham and red pepper. It was pretty good.
