Title: BelGioioso WMLM Mozzarella For NY Pizza?

Yesterday at Restaurant Depot I specifically went to get some Saputo Gold WMLM because of the high praise this cheese gets at the PMF.  While there I saw BelGioioso WMLM Mozzarella.  I still got the Saputo Gold but the BelGioioso caught my attention because all I ever seen and hear about is their fresh moz.  I did a search here at the PMF and all I see are post about the fresh moz by them.  I don't think I have seen one mention of their WMLM Moz.  Wondering if any of you have tried the WMLM version of BelGioioso?  If so how is it?  Does it compare favorably to Grande?

The Saputo Gold that I bought has a different label than what is normally pictured on the Internet.  This first pic is the label you see a lot on the Internet.  The second is what I bought.  Should be the same but don't know why the labels are different.  The second one I took off the Internet because the one that I bought is in the refridge outside in the garage and I didn't take a picture and I am too lazy to go out there.

 BelGioioso thanks for the reply and info.  I am glad you sell it at RD.  Because I like your fresh moz and you have a great reputation I will buy it next time.  I am really intrigued by your LMWM.

I am not a big fan of Belgioioso fresh mozz, just the look of how it melts on pizza. when we conducted testing on how it looks when melt, did not pass but this cheese i am curious. I am always looking for more options so i know where to go incase i get in supply crunch.

I will post a pic but I actually didn't buy the BelGioioso, I just had a question about it.  I bought Saputo Gold.  Next time I will buy the BelGioioso.  I may post a pic under NY Style for my SG pizza.  Keep looking today for the pics.

I'd try it if I could find it, the only store around me that carried BelGioioso Mozz recently started carrying only Murray's.  I really liked their fresh Mozz, I guess I'll have to check other stores to see if somebody else carries it.  PizzaEater101, do you remember how much it was?  I've never been to RD but since they're open to the public for the time being I might need to go check it out.

Yes, it is $3.94 per pound for Belgioioso LMWM.  Now I may be wrong about how many pounds that block is but it looked big.  All these Mozzes were 5 LBS but for some reason that Belgioioso may have been 6 LBS.  I may be wrong.   Once I am done with the Saputo Gold I am going to try the Belgioioso.  SG is good but the Belgioioso may be better but time will tell.

Not all RD carry the same stock.  The RD locations near me didn't carry SG so I had to go to Van Nuys which is about 35 minutes away.  Also I never saw Belgioioso before either.  So maybe your local RD may or may not have Belgioioso.  If you get some please post a report on it and post pics.

Iíd love to try it. The restaurant depotís in Phoenix have all stopped carrying Saputo and PollyO. All I have available to me is their house cheese which is ok and something called California which is far from ok. They do carry a lot of BelGioiosoís fresh mozzarella  products so Iím keeping my fingers crossed that theyíll be bringing this in soon.

When I was looking for Saputo all three RDs within a 20 minute drive didn't carry it so the one I go to most which is the Pasadena (CA) location, I asked the manager if they can just order one for me.  He was polite and said sorry, unless I order a case he can't.  He said they used to carry it but don't now because it didn't sell well.  He said different RDs sell different products depending on how well they sell.  So at least Van Nuys had it.  It is about a 35 minute drive for me if traffic is light. No problems.  Also I haven't been to "the Valley" in a long time so it was nice to go on that side of town again.  Basically whatever sells well they will carry.  So like me, in your area the Saputo Gold doesn't sell well.

RD is open to the public sometimes.  I have seen the Open To The Public sign up on different occasions but not all the time. 

If you really want it you may have to go to Van Nuys RD.  Since you are from Riverside that would be a long drive but maybe worth it to try because it is a big loaf so it will probably make lots of pizzas.  My girlfriend used to work in Moreno Valley but lived in San Gabriel.  It took 45 minutes to drive either way.  That is without traffic so from Riverside to the SG Valley may be an hour depending on where in Riverside you live, and another 40 minutes to VN.  So you are looking at a big drive each way but if you try their LMWM and like it, it will be worth the trip.

I can get Caputo but other than that itís Harvest King, Bouncer or Kylo. Definitely check the cheese section

Just took a look.
They have Trifoglio and Villa Frizzoni Mozz in a 6lb log.  Never heard of either.
Also Grande Mozz Fresh Cheese curd.

Next time I smoke cheese, will have to go there instead of local market.

Which I'm guessing means there could be a section for non worker/delivery people like me. I'm just trying to figure out how I know what they carry.  I know I can call Monday morning and ask,  but if you fill me I might need to be there Monday morning when they open :D

I have seen Pie & Burger  recently.  I believe it is still there. If you end up going to RD in Pasadena if RD near you doesn't have what you want make sure you call to see if they are open to the public.  Thing is sometimes they are open to the public and sometimes they aren't.  If they aren't and you want to go in and buy I will help you get in.

The entire store is open to the public. Itís like a bigger Smart and Final. No membership fees, crazy hours and I donít think Iíve ever seen a forklift. Itís a really nice play to shop for things and overall I rate it much higher than Restaurant Depot and Chef Store.

For pizza making they have Alta Cuccina, tomato magic, 7-11, Dinappoli tomatoes(not the Bianco ). Flours arenít great but they do carry Caputo Blue, Harvest King, Bouncer and Kyrol if you donít mind bromate. Cheeses as I stated earlier used to be incredible but they have discontinued most of them. I picked up grande fior di latte last week for $15. They also have fresh yeast which I prefer using for $2. Sadly, no quality pepperoni.

Too bad the Shamrock So Cal location is about an hour and a half from me.  I will have to stick with RD.  I love RD anyway.  They have all the tomato products you mention.  Too bad no Grande tho.  I am happy with Saputo gold and Bella Rosano tho.  I will try BelGioioso.

Caputo Blue's enough alone for me to go, nowhere around me has anything 00, and ordering it online's $$$ for shipping.  last order online I paid $22 for a 10 lb bag of 00, I gotta go Monday to check this place out. The pics I see on Google are definitely for the warehouse side, and the 50 or so reviews are all from truckers who make deliveries there.  I can't find any actual reviews for the store part. I couldn't even find if it's a store you go to to or a will call.  Their web site isn't very informative.  I like Smart & Final but sadly no 00 flour, at least at the one by me. And their cheese selection's just okay. Thank you for the reply, I'll be so happy to go Monday and get a 50lb bag of Caputo Blue, you don't even know :D

From their web site, Shamrock is in these locations:

    Phoenix, AZ
    Colorado Springs, CO
    Denver, CO
    Ft. Collins, CO
    Albuquerque, NM
    Farmington, NM
    Las Cruces, NM
    Roswell, NM
    El Paso, TX

   So Cal location must be new.

Web site (at least for my store) only show Grande Fresh Curd Mozz, no loafs.

It's all relative, nowhere except this place around me carries it, so $35's great. If I buy online shipping alone will be that much. It's $72 on Amazon with "free shipping"

I interpret Amazon's "free Shipping" as "No additional Shipping Charge"
Shipping charge is built into the price of just about every item.

I couldn't resist.  I went tp RD to buy a brisket and I bought the Belgioioso LMWM.  I have enough Saputo Gold for many pizzas and I need to finish it first so don't expect a review anytime soon. Good thing is Scott says he got some his rep so we can look forward to his review.  Why did I buy if I have SG, why not wait? Because the RD sometimes carries something and the discontinues.  My understanding is if Cheese is unopened it could last some months.  This is huge, we are talking 7 LBS.

The pizza was an upside down, so im not sure how it melts. 

I cant find this cheese for sale in ma yet, but I was curious about price so I looked up the pricing in one of the southern CA restaurant depots.  It was the most expensive mozzarella cheese by a decent margin.  I could be wrong, but im guessing this cheese is even more expensive than grande, or certainly at that (top level) price point.

I made some non upside down pies and this mozzarella did oil off more than my family prefers.  This could be my own fault, as I was using the sample AT the use by date.   Its been in my fridge for a few months now, so maybe that caused the oiling off.   Either way its a good cheese. 

I noticed that many restaurant depots sell this cheese along with 1950 cheese from formost farms.  I did a side by side with these two cheeses and the 1950 did have a more buttery flavor.   I think next time I would go for 1950 if given the choice between the two cheeses.   

Here is a pic of the Belgioioso cheese that oiled off on a NY style pizza cooked in my home oven. I did use the broiler for part of this bake and went heavy on the cheese, so maybe that helped create some of the oil as well as the very well aged cheese.

No problem.   I do think it did well to resist burning.   I wish I had grande for a side by side, but I can say that normally I see more color than this when I need to use the broiler and im using other cheeses.

I've never been overly impressed with Belgioioso cheese (sorry if I've already said that here before), but after your recommendation, I will keep my eyes open for this one. I'll see if I can get my local GFS store to order some.

Sorry you had oiling with our cheese. It does happen because it has more fat (and thus more flavor...) but we do recommend using less than you normally would since it has better coverage and melt.

thank you!  Yes, it may have very well be operator error and I did put too much on.   Im assuming use by date was part of the issue too with the oiling off.

Here is one I did with this cheese.  I liked it. 

Scott what do you mean by oil off? Do you mean oily? If so I didnít get much of that until I left it in longer otherwise it stays in tack and melts but stays white.

This cheese is burn resistant.  If you want it to burn a bit you must leave it in longer.  It stays white for a long time.

The pizza was an upside down, so im not sure how it melts. 

I cant find this cheese for sale in ma yet, but I was curious about price so I looked up the pricing in one of the southern CA restaurant depots.  It was the most expensive mozzarella cheese by a decent margin.  I could be wrong, but im guessing this cheese is even more expensive than grande, or certainly at that (top level) price point.

At RD the price fluctuates a lot.  I bought it then a week later it dropped then a week later went up.  I forgot the prices but it fluctuates a lot.

Im not surprised.  But I don't think its specific to this brand.  All mozzarella cheese sold to pizzerias is like that.  I was seeing the same aged mozz under $2lb and above $4lb back and forth a few times recently within the past few months.

I am with you.  I like that oil on top.  The splitting I am not sure what you mean but oil yes.

Okay, I made some more BelGioioso pizza.  What I confirmed with what I said it takes a lot to burn.  Takes a lot to burn, brown, turn orange, and oil off. It seems to stay white a long time. The pizza could be done and itís white.   People dislike Sbarro around here but Iím not the biggest fan but I like Sbarro.  With Sbarro it used to be a pizza with cheese that was very white and no browning, turning orange or burning and this Belgioiso is like that.  A very white cheese on pizza looks cool but it doesnít have the flavor it should.  I like the orangish color Grande gets and flavor.  So here is the trick.  Bake the pie with BelGioisoio long  enough to start having an orangish hue to it and some oil appears.  It wonít burn or turn brown unless you leave it in even longer.   Also shred it very fine. I usually use large shreds but I used the small grate on the grater and it was nearly fine.  Donít over do it with the amount of cheese on the pizza. Do all these things and you will bring out great flavor in the cheese.  It taste like itís got a lot of milk fat in it like the BelGioisio man said who post here.

I can't imagine how it could be any different for your health if it didn't separate. It's not like it's not in there anyway.

This is what I mean by Sbarro pizza is white, no oil and no burning.  I grabbed this off the internet.  I like Sbarro but it is not my favorite.  There are better NY Pizza places but it taste good to me. I go to independents but if I am at the mall I am happy to eat Sbarro. So when I say BelGioisio is white unless you bake it a long time it looks similar to this.  There are some spots with browning but not much.  Actually the cheese has a yellow tint to it rather than purely white.  BelGioioso actually is yellowish too in the loaf. When I grated it really fine it looked more white for some reason.

And the blend heís talking about because the LMWM they make is excellent so I can just imagine their blend must be amazing too but I donít see it at Costco or Restaurant Depot.

I live out in the middle of nowhere, over an hour to the nearest Walmart, Home Depot, etc. A few weeks ago I stopped at a small market in a neighboring out-in-the-middle-of-nowhere community and was surprised to see a block of BelGioioso WMLM. It was about a month out-of-date, but looked fine, so I picked it up. I cut it up into 1/2lb blocks and froze it. I've made a couple of 16" pizzas with it since and I do like the flavor. As I'm not heavy with the cheese, the oiling did not look excessive. The block originally came from Cosco of which I'm not a member. I don't remember seeing WMLM at our "local" Sam's Club (in Las Vegas) where I am a member.

I don't have experience with many different brands of choose so I'm no expert. My usual go-to cheese is what I can find in regular stores: Galbani or Trader Joe's, which both taste good to me. The BelGioioso has more flavor, and it's cheaper to buy in larger blocks.

Im very happy for this community that Costco picked this product up in some regions.   I hope that many of you can find this cheese locally.
