Bought a couple ribeyes the other day at 50% off with a sell by date of the 1st! Seasoned and air dried in the fridge for 24 hours and did them on the BigHorn after getting a few chunks of apple wood going! Smoke was subtle and perfect, and didn't want to eff around with the charcoal in 40mph winds! BigHorn worked like a champ!!!!!😋😋😋

Plateing looks great Jon. But that seared pic just out of the Horn looks like Pork chops. ??? Strange. I guess lighting can be a fickle bitch. That said, your plated steaks look amazing.

sorry, don’t have more photos, tomahawk over a charcoal chimney, temp was 875F. our condo community is not  allowed to have grills so I use the chimney in the common grill to achieve high heat.

found another solution to not having a grill

I've actually done that - kind of. I used a torch and a heavy steel spatula.

I used a electric charcoal starter once. It was the most horrible smell and taste. :-X
