NY Style - Pizza Tray

When I was in New York I noticed everywhere you go the pizzas are served on these large, thin aluminum pizza trays often mesh or with lots of holes.

Are these trays only for serving/cooling or are the pizzas actually cooked on these trays?

If cooked on them, do you also need a stone to rest them on or are they supposed to sit by themselves in the oven to let the hot air reach the bottom?

If you are talking about screens, they are for cooking and can be used for cooling. But if you are talking about the round pans, those are generally used for cutting and serving.
The screens may or may not be needed, depending on the type of oven being used. I use a screen for my pizza at home, but that is because I wanted to make a bigger pizza than my stone would allow.
I said to my little one, "come here so I can change you".
He said "change only comes from within".  :-/
