What's your recipe?
I refer to this online recipe which is near identical to the recipe printed on the Bobs Red Mill tapioca flour bag. I add the tapioca flour to the blender last and extra slowly. (Otherwise it will seize the way corn starch does.) Also, I dont blend the cheese in the batter rather I add big pinch after its poured in the mini-muffin tins.. pre bake, of course.
