Thanks, Norma, I'd be interested in trying / learning more about these - lots of heavy duty meshes available online but not sure how heavy it needs / should be, or what material is best - lots of options at this place - but very pricy....

Let me know if there's anything I can do to help. Below is another pic to compare to the one you posted

It looks like your mesh is finer than the one in the picture - but hard to tell how much exactly. Do you think what you have is steel, aluminum or SS - is it coated or is the black color just carbon build up. Does / will a magnet stick to it?

Agree that the mesh is finer. I'm not sure what it's made of, that's beyond my area of expertise unfortunately.  A magnet does not stick to it. Its definitely silver in color, which you can see in the pictures below. It kind of feels like a staple or paperclip, but it bends very easily (based on the little piece sticking out in the second picture).

This is 40 mesh and 20 mesh (squares per inch) - yours seems to be somewhere between these two.

Number of squares in a 1 inch line (not in a square inch)? I counted 14 or 15 depending on how the tape was laying.

Price came out crazy high - 10 bucks each if you buy a hundred - Plus no edge and not even sure it is right - Hope Norma finds something....

The man told me he thinks the screens that look like Matt's are about 7 to 8 dollars a piece.

You need to hold the tape parallel to one set of wires and count (you're at 45 degrees to both) - the squares are longer on the diagonal, so you're getting a low count. It looks like about 20, using the paper ruler that I copied from yours.

The picture below is from "The World Famous Little Italy Pizza" on 45th and 6th in midtown Manhattan. Not to be confused with the dozen or so other shops called "Little Italy". It looks to me that they are using a mesh based on the undercrust, which is interesting because I thought the mesh was more of a Queens thing.

That's the first mesh screen I've seen in Manhattan.  Screens I see in Manhattan are the aluminum wire ones that you see sold on Amazon.com.

This is in contrast to Queens where you see it frequently.

Was told that Rose Bagali at John's Pizzeria in Elmhurst, Queens makes their own screens.

Was also told there is a crazy older man that lives in Brooklyn that makes those fine mesh screens.  After being told about the crazy older man couldn't find anything else about him or those screens.

We gotta find that crazy older man.  Maybe have Frank Pinello do an espisode in search for him.

Side note.  I like that sign behind the lady, they sell the Tower Isles Jamaican meat patties.  It's a thing in Queens, they also filet them open and stuff with mozzarella and pepperoni.

Harry,

Have been searching for that older crazy man for awhile.  A person at Allied Steel told me about him, and tried to get in contact with him but no luck yet.  Might post about those screens on my facebook page and see if anyone can lead me to him.

Will have to try those Jamaican meat patties next time I get to Queens.

Matt, can you tell us who resized and crimped your mesh for you?  Can you find out what tools are needed?  Can't be too hard.

Norma, do you know what exact material to use?  Does Allied Steel make the mesh?

Harry,

I do not know the exact material to use but did find links from China that looked like the fine mesh that Matt posted.  Too much has to be purchased to order any.

Allied Steel does not make the mesh.  A man that works there said he heard of the crazy older man that makes those mesh screens and was trying to find him.
