Bosch Compact & Styline Mixer
« on: July 14, 2021, 01:33:14 PM »
Appreciate any tips for using either the Bosch compact or Bosch styline mixer?  I was fortunate to be gifted the 450 watt Mum5.  Using a mixer for the first time; previously kneaded by hand or food processor.   Been making direct, poolish, and tiga thin crust style in the 60-70% hydration range. Small batch sizes typically 800 - 1100 gms.  Bake in a 550F electric home oven with a steel.  Typically 48 to 72 hr CT.   This mixer has a planetary motion mixing which seems unique.   I typically use instant dry yeast and add some sugar (or honey) and olive oil.   Have watched many YouTubes of making pizza dough by mixer, but with this Bosch is there some better ways as to when to add ingredients.   Currently I add salt and olive oil last after a 15-30 min autolyse.  Also plan to try a biga Thanks
