I no longer look at your pizza and judge it against or with Da Michelle, I look at them as Jackie Tran Pizza, distinctive, not a copy, a signature and looking fine!

Thank you Greg,  I appreciate that!   I have for the most part worked away from the DM look.   I mainly shoot more for texture now.   But every now and then I try to go back and pick up the challenge again for fun.

They look fantastic!!!!  The only difference is the size and a tad larger cornicione, but that could just be the photos!

Did I just have my first real NP pizza? 

Last pie of the night.  Cranked the oven up and stretched really thin since the dough was on the strong side.   28s bake.   Could have pulled it at 25s but wanted it a tad darker so I went an additional 3s.   

Totally soft.  No crisp at all.   The sauce tasted barely cooked.  If I hadn't stretched it as thin as I did, I'd say the pizza would be on the doughy side.   Really surprised that I ate the whole thing after I had already eaten a half or more of 2 other pies.    Definitely need to try this again.

Thanks Bruce.   Repeated the test and baked one today at 34s or so.  Was doing this one solo so no one there to time but me.   This one was also very good.  Small amount of crisp and also very good.

Last pie 55s or so.  165gm, almost 13in pie.  Light, airy, and crisp.
