Cool dough stretch technique! How does he do it?

Can someone put in to words the physical technique heís using here with the stretches done at the following time stamps?   Looks like a very efficient technique!

41-42 seconds

2:25-2:31

4:52-4:55 (over the shoulder view)

8:15-8:19

11:20-11:22




EDIT:  by ďput in to wordsĒ, I meant to literally explain how he does it.

The Flapping Hands technique. You just need lots of practice and a dough that is suitable for it. Unless you plan to open a pizzeria, I don't see why you would need to learn it.

Those pizzas and ingredients look fantastic! And the pizzaiolo seems very talented (his peel technique pull/flick on dough before launching is cool, you can see a bit of air go under). I think this is in Astoria, Queens, NY.

Thatís the fastest knuckle stretch Iíve ever seen.  I donít have any pressing appointments, so I do it slower

very nice operation indeed.
that fast knuckle stretch is impressive. His dough looks on the slightly less hydration or less overfermented side to do that without hand punching thru.

Did he squirt water at 10:00 to slow down the fire ?

Looked like maybe oil as the flames increased after he squirted it.

I doubt his water is that flammable, so it has to be something else.
