I had some extra dough so cut into 3 strips, flattened, spread mozz, sliced pepperoni, parm, pinched each together to form a tube like thing with toppings inside, braided and baked.  It tasted pretty darn good but way too much labor to consider doing it on the menu.

This morning was a very unnerving one.  The swamp cooler in the rear kitchen was not working, we had a leak from either the roof  (had some heavy thunderstorms here yesterday), or the front swamp cooler is leaking, the lettuce delivered today was crap (had to send it back), and had repairmen in on the cooling stuff during lunch service.  The produce company just brought me some new lettuce so I am back on even ground for dinner.  Plus we had a couple NYC/NJ guys in that I think came here 25 years ago on the witness protection plan.  They are characters to say the least.  Still waiting on repairman to fix our proofer on/off switch.  Piece of junk made in China and I have it rigged with a business card to keep it on and have to plug/unplug from the wall.  But at least it is working!  Walter

Thanks!  We made it through the night ok.  I am glad today is over.  We will sit in our courtyard at home and watch the sputniks and stars for a hour or so to decompress  :)

This week has been so busy that by Thursday we had made what we do in a normal week.  Coupled with my main crew members going to all parts of the state/country - college has let out for the semester - has made for interesting times.  We  had to hustle up a fairly unskilled group to get us through this month and next.  Amazingly we are doing it up to standard but I am having to work 2-3 times as hard as normal in prep and the making end.   Tonight was so busy I barely got a sip of water and we had to delay pick up times to allow the ovens to empty.  The bottom oven is a tough one on me as I have to kneel to use the back part of it.  Tonight we took the phone off the hook for over an hour and turned away a 20 pizza order.  They wanted it at 11am but we don't open till 12.  It is tough to say no but we need to hold our ground to keep our mental and physical well being which translates to quality control.  All said and done Judy and I are pretty tired but with the loving energy of our customers and the holiday spirit it is all working out.  Tomorrow it is dough making at noon and then prep through to opening at 5.   We just got a hot tub and it is a godsend as we can work out a lot of our aches with it and watch the stars and mountains.  January we celebrate 2 years open.  That is a blessing as we have seen many food places go under already that started when we did.  Reno is a cool place for us at this point in our lives.  It  has enough city vibe for us but lacks the stress of the NYC/SF areas that we grew up in.  Walter

We had a birthday party in last night and they posted this picture.  They ordered small pies and we overbooked on them so gave a large instead.  We have been so busy since Thanksgiving it is getting a little hairy to keep enough dough on hand.  It could be worse - like we are so slow the dough is going in the trash  :-D

Here is a special customer that bought one of our shirts to wear to school.
